Аннотація: The oil and fat industry of Ukraine is one of the branches of the food complex, which consists of interconnected production of oil, fats, margarine, edible oil and sales. Insufficient innovation and investment orientation of oil and fat enterprises. At first glance, the oil and fat industry is one of the most innovation-oriented sectors of the domestic economy. The innovative activity of the enterprises of the oil and fat industry is carried out through the introduction of complex equipment to ensure the full cycle of production of oil and derived products; application of new types of catalysts in oil and fat production technologies; improvement of oil extraction technology and margarine production; use of waste oil and fat production to create new products.
